Is there a reason this set-up wouldn't work?

I have a 5.3 that I'm putting in a 54 Chevy Truck. I really like the look of a carb set up but want to keep my fuel injection. Is there a reason that I can't take this Holley intake



And us a couple of adapter and use a pair of throttle bodies like this



The way that I'm thinking is that if I block off the fuel inlet like and only use them to allow air into the engine that they serve the same purpose as an after market throttle body such as this one.
