350 crate overheating

Hi, new here but i saw good answers from users.

1983 s10 blazer 4x4 (v8 swap) OVERHEATING
350 crate motor stock exhaust headers new flow-master 50series mufflers
edlebrock intake and 600 cfm carb all out of the box no adjustments
new 3 core champion radiator 13 lbs cap and a 160 degree thermo
new upper and lower hoses and heater core+ new hoses for them too
fan shroud fabricated at a sheet metal shop with one 12 inch and one 14 inch electric fans
new water pump from advanced auto parts (not sure if its flowing correct way) that's 1st question
Put it this way all cooling system is new in one way or another

Situation #1
All with hood up
at idel never gets above 170
at idel with a/c goes to 190
at idel in drive parking brake on with a/c 195-205
with a little gas with brake on and a/c 210-215 (i wont let get higher )
i turn off a/c it will go to 200-210

with hood down
at idel never gets above 175
at idel with a/c goes to 200
at idel in drive parking brake on with a/c 210-220
I lift hood and flip the back pressure lever on rad cap to relieve pressure

Wife's dad's truck when he died so means alot to her and she stated it never over heated with a/c on

How do i get the temp to stay down to a normal temp or at least under 190 in traffic
